Sweet potatoes panellets without oven: An afternoon with friends

This year, at Roosik&Co we celebrate All Saints in a very special way. We propose a recipe for panellets that you can make at home, enjoying the process with friends or family.

This time, we are joined by Mariona Falcó , nutritional coach and a friend of the house, who teaches us how to make a healthier and equally delicious version of these traditional sweets.

In addition, Jordi Rosich, our jeweler and designer (and Mariona's husband!), wanted to get his hands on it... and we can't imagine a better way to spend an October afternoon.

Recipe for Sweet Potato Panellets without Oven

Ingredients:

  • 200 gr of almond flour
  • 100 g of whole panela sugar
  • 100 gr of cooked sweet potato
  • 1 pinch of salt
  • Zest of a lemon

Breaded (you can choose or make a little of each):

  • grated coconut
  • Toasted flaked almonds
  • Toasted pine nuts
  • Cocoa powder or cocoa nibs

 

Panellets recipe to make with friends

Preparation:

  1. First, mix the panela sugar with the almond flour, the cooked sweet potato, the lemon zest and the pinch of salt. We stir it well until we get a smooth and uniform mass that does not stick.
  2. Now let the dough rest in the fridge for at least 30 minutes or, if we prefer, all night (this will make it even easier to work with!).
  3. After this time, comes the fun part. We take small portions, form balls and coat them with coconut, pine nuts, almonds or cocoa, whichever suits us best. And that's it! Ready to taste.

A moment to enjoy

With this recipe for sweet potato panellets, we not only enjoy a more natural and nutritious sweet - sweet potatoes provide us with vitamins A and C, antioxidants and a lot of fiber, and nuts, proteins, minerals and healthy fats -, but at the level emotional we also give ourselves some time to disconnect and create moments together.
